Tortilla Soup (crockpot style)

I have a forever friend named Mick.

No, her name is not really Mick, it's Lesley.
(That's kinda a long story, but I didn't want you to be confused when you hop over to check out her blog and find someone named Lesley signing all of her posts.)

Bear with me here ...

Several years ago, I had the pleasure of teaching Mick's son, Carson, in my kindergarten class.  
That year, I was spoiled -- at least weekly (if not daily!) with yummy homemade goodness (mostly banana bread, my favorite!).
One day, Mick brought me some yummy soup for lunch -- and I loved it so much, I had to have the recipe (which was from Cooking Light magazine and was actually called "SW Turkey Soup").

Since then, I have tweaked the recipe - and started making it in my crockpot, rather than on the stovetop ('cause who doesn't LOVE coming home to a yummy-smelling house AND dinner already made!?).

So here's MY version of a yummy tortilla soup, crockpot style!



So far, so good...?
Next comes all the spices:
1/2 t. chili powder
1/2 t. cumin
1/4 t. salt
1/4 t. pepper
2 bay leaves
....Just throw that all in! (or sprinkle it if that suites your fancy)

















When you're ready to eat, dish up your soup ... and of course ... top with the good stuff:   crushed tortilla chips, sour cream, and cheese :-)










Oh yeah ... and remember that SUPER simple crockpot recipe I posted HERE...?
Well, I often just use the leftovers from that recipe to make this recipe!  Just use the same recipe as above, except you don't have to add the meat, you don't have to add the black beans, and you can substitute a smaller can of diced tomatoes.  

Eat ... and be merry! :-)

  2. OMG! I will definitely have to try it this weekend! It's a great recipe to leave cooking when we go out to baseball tournaments with our son. Now we can come home to a ready home made meal! Thank you for sharing!

  5. Oh this looks YUMMY! My hubby would love it...he would like Mexican style stuff every single day!! I really need to use a crockpot, it would save me tons of time!

  7. And THAT'S what's for dinner tomorrow night! =) I was trying to come up with a crock pot something for dinner tomorrow night so we could easily make it to church on time (we have a crazy busy day tomorrow), and this will be it!

  10. I just cooked my last frozen turkey (purchased at 19 cents a pound!) on Friday. I have one turkey breast that needed a recipe to go in and I think I just found it! :) Thanks for sharing the yumminess!
