Yesterday was my family's annual Christmas cookie baking day.
We bake and decorate cookies ALL day .... so much fun! And SO much yumminess! :-)
In addition to baking cookies, each person brings some kind of candy to share with everyone else.
MY kind of candy is ALWAYS peanut butter balls.
They are SOOOOOOOOOO good.
And super simple, too!
Here's what you need:
* 1/2 cup unsalted butter, softened
* 2 cups creamy peanut butter
* 1/2 teaspoon vanilla
When that's nice and smooth, add in:
* approximately 2-3 cups powdered sugar
(I add about a cup at a time .... and try to get it to the point of not "sticky" .... it will be pretty stiff!)
**NOTE: I made a double batch, so you will not have this much dough with the measurements I gave!
Using a 1 inch scoop, make "balls" of peanut butter mixture and place on wax paper.
When peanut butter balls are all scooped (#1), place chocolate almond bark in a microwave safe dish (#2) and melt ... I use a silicone bowl -- SO much easier! Start by heating chocolate in the microwave for a minute, then stir, then continue heating in 30 second intervals, stirring after each one.
And WOW, are they good!
One (or two .... heck, it's the holidays, calories don't count, right!?) of these babies and a cold glass of milk...?
Doesn't get much better.
